Adam sets his sights high!

Adam's promotion sees him taking over the helm at The Hadleigh Ram.

A keen rugby player Adam underwent his chef training at Pennyhill Park Hotel, home of the England Rugby Club. Once trained he felt he lacked that certain something and thought broadening his training would not only look good on his CV, but allow him to gain further experience, thus he relocated to Australia, to work in restaurants in Sydney & Melbourne.

Finding the seasonal changes difficult to acclimatise to, in particular cooking and eating Christmas dinner with the temperature in the mid 70's he decided on another move, back to Suffolk where he joined the Marco Pierre White team at The Angel, Lavenham.

People often say 'made' not 'born' when referring to ones career, however with Adam it would have to be 'born', as from the age 16 he was Weekend Breakfast Chef at Pennyhill Park which required 5:00am starts, that's something for a lad of 16 to get their head around!

When asked what his 'food heaven' and 'food hell' was, replied "nothing beats home cooked roast dinner", I'd agree with that, especially roast pork with proper crackling! As for food hell he wasn't sure, but said, oysters could be one! One food many people either like or loath!

As a talented rugby player Adam is keen to help youngsters engage more fully in sport and can often is found coaching juniors at the Hadleigh Rugby Ground on Sunday's when not working or pursing another of his spare times activities, experimenting with new food dished created by him.

I asked Adam what energised him about becoming The Ram’s’ Head Chef - "building a good, excited and enthusiastic team to make The Ram the best it can be" he replied in a cool and nonchalant way.

The chefs at The Hadleigh Ram make everything; from stocks and sauces to bread and pasta, even our own ice cream!
